Mini Choc Cupcakes with strawberry cream cheese frosting

Chocolate Cupcakes (I halved below recipe to make 30 mini cupcakes)

(see my chocolate cupcakes post to see how moist and fluffy this cupcakes are!)

2 cups plus 2 tbsp. sugar
1¾ cups all-purpose flour
¾ cup plus 1 tbsp. cocoa powder
1½ tsp. baking powder
1½ tsp. baking soda
1 tsp. salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water
Method:

Preheat Oven 180C. Line 2 mini muffin trays with paper liners.
Sift together the sugar, flour, cocoa powder, baking powder, baking soda and salt in a bowl.
In another mixing bowl, combine the eggs, milk, vegetable oil and vanilla extract; whisk together.
Add to the dry ingredients and mix with wooden spoon until mixture is combine.
Add the boiling water and stir just to combine (batter will be thin).
Bake for 10-15 minutes, until a toothpick inserted into the center comes out clean.
Cool completely on a wire rack.

Strawberry Cream Cheese Icing (Recipe from My Baking Addiction)

Ingredients

1/2 cup whole strawberries
120g unsalted butter, room temperature
240g of cream cheese, slightly cold
1/2 teaspoon clear vanilla extract
31/2 cup of icing sugar
Method

Place strawberries in the bowl of a small food processor; process until pureed.
In the bowl of an electric mixer fitted with the paddle attachment, beat together butter on medium speed until light and fluffy.
Add in the cream cheese and beat until combined. Reduce mixer speed and slowly add confectioners’ sugar; beat until well combined.
Add vanilla and 3 tablespoons strawberry puree (save any remaining strawberry puree to fill cupcakes); mix until just blended.
Note: The frosting is able to be piped, but is on the soft side and definitely needs to be refrigerated!

Strawberry Puree Filling

1/2 cup whole strawberries
Place strawberries in the bowl of a small food processor; process until pureed

Note:

1. If your strawberries are slightly on the sour side, add some icing sugar to the puree to sweeten it.

2. I used the total of 250g of strawberries for these cupcakes + frosting.

Assemble Cupcakes

Cut a small hole in the cupcake
Fill strawberry puree in the hole
Put the cap back on
Pipe strawberry frosting on mini cupcake!

Bahan2:

4 butir Telur utuh
200 gram Gula pasir butiran halus
10 gram Emulsifier (Starkies, TBM, Ovalet, SP, dll)
140 gram Tepung terigu protein sedang
150 ml Minyak goreng
1-2 sdm Pasta sesuai selera

Cara membuat:

1) Campurkan telur dan gula, kocok sebentar, masukkan emulsifier, kocok hingga kental dan mengembang.
2) Masukkan tepung terigu dengan cara diayak, aduk balik menggunakan spatula.
3) Tuang minyak goreng dan pasta ke dalam adonan, campur hingga rata.
4) Tuang adonan ke dalam piping bag, potong ujungnya, tuang adonan ke dalam cetakan cupcake.
5) Kukus selama 20-25 menit.
Hasil jadi:
20 buah cupcake mini kemasan paper case
10 buah cupcake kemasan solo cup

Yield:
24 cupcakes

Ingredients
Cupcakes:
5 ounces unsweetened chocolate, chopped
1 cup water
1/3 cup mascarpone cheese, at room temperature
2 1/4 cups sugar
1 cup vegetable oil
3 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon fine sea salt
1/2 teaspoon baking powder
1 cup (6 ounces) semisweet chocolate chips (recommended: Nestle morsels)

Ganache:
1 cup (6 ounces) semisweet chocolate chips (recommended: Nestle morsels)
2/3 cup heavy whipping cream
1/2 teaspoon vanilla extract
Special equipment: 2 (12-count) muffin pans with paper liners

Directions

For the Cupcakes:
Place an oven rack in the center of the oven and preheat to 325 degrees F.
Combine the unsweetened chocolate and water in a small saucepan over medium-low heat. Stir constantly until the chocolate is melted, about 2 minutes. Cool for 2 minutes. Whisk in the mascarpone cheese until the mixture is smooth.
Beat the sugar, oil, eggs, and vanilla in a large bowl for 30 seconds. Stir in the mascarpone mixture. Whisk the flour, baking soda, salt, baking powder, and chocolate chips in a medium bowl. Add the dry ingredients to the chocolate mixture. Stir until just blended.
Divide the batter among the prepared muffin pans. Bake for 20 to 25 minutes or until a tester inserted into the center of a cupcake comes out with no crumbs attached. Cool the cupcakes completely before dipping, about 1 hour.

For the Ganache:
Place the chocolate chips in a small bowl. Combine the heavy cream and vanilla extract in a small saucepan over medium-low heat. Cook until small bubbles appear on the outside edge of the cream. Pour the hot cream mixture over the chocolate chips. Using a fork, gently stir until all the chocolate is melted and the mixture is smooth.
Dip the tops of each cupcake in the ganache and transfer to a baking sheet. Place the dipped cupcakes in the refrigerator to set, about 15 to 20 minutes. Allow cupcakes to return to room temperature before serving.

Cook’s Note: For puffier cupcakes allow the batter to rest in the muffin pans for 20 minutes before baking.

Chocolate Chipz Muffins

50g maizena (cornflour)
3 sdm coklat bubuk (cocoa)
100g dark soft brown sugar
225ml air dingin
75g unsalted butter / (margarine jg blh)
1 sdt garam
125g dark chocolate, potong kecil
75ml sunflower oil — bisa diganti minyak goreng biasa
2 sdt vanilla extract
2 butir telur
125g gula kastor (caster sugar)
125g tepung terigu (plain flour)
2½ sdt baking powder
Chocolate chips (suka-suka)

Cara membuat:

Tuang tepung maizena, dark brown sugar, coklat bubuk dan air ke dalam panci. Masak dengan api sedang, sambil terus diaduk sampai mendidih dan adonan menjadi kental dan lembut.

Matikan kompor dan angkat panci, masukkan butter dan potongan coklat, kocok sampai meleleh dan tercampur rata.
Tambahkan minyak, vanila dan satu butir telur. Terus kocok sampai tercampur rata.

Masukkan sisa telur dan gula kastor, kocok sampai kental dan smooth.
Campur tepung terigu dan baking powder dalam wadah terpisah, aduk rata. Ayak campuran tepung ke dalam adonan. Aduk perlahan hingga rata.

Dengan sendok, masukkan adonan pada 12 muffin cases.

Bakar pada oven dengan suhu 180 derajat celcius (165 pada fan-assisted oven) selama 25 menit. Untuk yang pake otang (oven tangkring) seperti dirikuw, pake api sedang aja.
